Effect of Euthynnus affinis Meat Concentration on the Sensory Acceptance of Fish Roll

Skipjack tuna (Euthynnus affinis) is one of Indonesia's important fishery commodities with high protein content and great potential for value-added product development, including fish roll. This study aimed to determine the effect of different concentrations of skipjack tuna meat on the organoleptic acceptance of fish roll. The research employed an experimental method namely the concentration of skipjack tuna meat, consisting of five treatments: P1 (450 g), P2 (500 g), P3 (550 g), P4 (600 g), and P5 (650 g). Organoleptic evaluation was conducted by 25 semi-trained panelists using a nine-point hedonic scale to assess color, aroma, taste, and texture. The collected data were analyzed to determine the level of panelists' acceptance for each treatment. The results indicated that increasing the concentration of skipjack tuna meat tended to improve the organoleptic quality of fish roll. The highest acceptance was obtained in treatment P5 (650 g), with scores of 9 (extremely like) for color, 8 (very like) for aroma, 9 (extremely like) for taste, and 8 (very like) for texture. It can be concluded that the concentration of skipjack tuna meat significantly influenced the organoleptic characteristics of fish roll, and the P5 treatment produced the most acceptable product based on panelists' evaluations.
